Same issue here... Never solved it but I have the mic sensitivity on full... Might give the opposite a go and see if that works...
It equally bad in Bmw idrive or CarPlay, to the extent I cut call's short to avoid repeating myself to people!
It's fine when parked with roof down or low speeds however, seems to be anything above 40mph ish
