The pork loin was slow cooked and shredded with stewed red chile made from steamed and pureed chile pods with garlic and herbs. The pork juice was mixed with the masa to get the right consistency and the tamales are very small with minimal masa.

There will be another pot of red chile to go with pinto beans.

The posole gets pig foot for flavor and then it gets removed before eating. Whoever actually likes that can have at it. I won't touch it, but posole doesn't taste right without it.

Love it. Not much better than home made tamales and Posole! I have finished off my first December dozen, and lookiing for the next dozen! One of my favorite things about this tiime of year!

Funny, I just looked at your location and I remember I ran into a lawyer from Alberquerque not too long ago...least I'm pretty sure that's where he was from.

I think his last name was Maestas and I want to say his first name was Allan - might have spelling wrong on both. Does that seem familiar to you at all - probably not, its a big place.

I just don't like tamales

The 2nd or 3rd date with my wife lasted about 36 hours. We made 110 dozen to sell for the boys football fundraiser. They sent the gringo at midnight to go find more husks
Oh, and then I needed to take my contacts off after getting all the seeds out of the pods

While the Senate is going at each other’s throats today it’s being reported that the USA/China trade deal is close to being signed. The first stage of that trade deal that is.
Market shot up right before closing today and if and when it gets done will more then likely shoot the markets higher and higher. The markets hit an all time high today right in the middle of this I’ll conceived political hit job to remove a President. Market don’t care which means America don’t care. Good luck with that impeachment thing and keeping Trump from getting re-elected.

Maestas is a pretty common name here. Fortunately I do not require much legal assistance with lawyers and such. Albuquerque is a small city at about 570,000 people. But still enough to not see the same people everywhere.

The first time I ate a tamale was at a park in Whittier CA when I was 10. The family at the park offered me one and I ate it with the husk on it. I thought it was terrible.

Most of the time I stay away from them but these tamales we made last weekend are really good. Still not my favorite food, but def my favorite tamales. I like posole, great winter food.

I am usually the only gringo at the store we get our meats, husks, hominy, chile, etc. from. Funny though, my lady doesn't like the masa from there so we have to get some specific brand that doesn't have a lot of the stuff that others add like lime juice, or a lot of water, etc. So last weekend all of the stores were sold out of this brand so her dad called around and found an Albertsons that had it in stock. He drove way out to the northeast edge of town which is a predominantly white neighborhood. I was laughing that the only store in town that wasn't sold out was of course in that neighborhood. He bought all of it, said he felt out of place there. Yeah, just like when I go places on the southwest side. Everything is pretty evenly mixed in the middle of town though.
